Darling, can you stop your heart's pumping a little bit, so I could give you an answer?...Well, there's first the Roman pastas, especially cacio e pepe, with black pepper and olive oil, and the spicy all'amatriciana, with chilli, pancetta and tomato. They also favour a dish made out of escalopes of veal, coocked in white wine and prosciutto. Added to this, Italians stuff themselves with tripe and carcioffi alla romana, that is artichokes with garlic and mint. Satisfied?
